PURPLE GREEN JUICE

purple green 1My third and last of my three-colours green-juices post-festivities detox-session! As I explained in the previous post (orange green juice) the fact that these juices are based on fruits and vegetables of specific colours is not just a visual indulgence. In fact these colours are the ones of “phytochemicals”, non-nutrients that play an important role in our metabolism by activating/deactivating physiologic processes. 

In the case of the colour red-purple, this is caused by anthocyanins that have antioxidant properties and it has also been suggested that are very important in preventing carcinogenesis and mutagenesis. Here the link to the European Food Information Council for an in-depth about phytochemicals associated to colours.

This is my favourite juice, the raw beetroot is fantastic! Just be carefull when you cut and juice it because of the stains its colour can cause…

Ingredients
  1. 1 Beetroot
  2. 4 Radish
  3. 1 Red-Purple Apple
  4. 2cm piece Ginger
  5. 1/2 Lemon
  6. 1,5 cm slice Red Cabbage
Instructions
  1. Clean surface areas and get your ingredients nice and ready.
  2. Wash vegetables (the radish with a brush for potatoes) and peel lemon. Also peel the ones with skin if not organic.
  3. Pass them in a juicer (juice free of pulp, easier to digest) or a very good blender (juice with pulp and fibers). In this second case you might need to add some water to make it more liquid.
  4. Add salt and/or agave syrup according to taste.
Notes
  1. If you buy organic is better because you can juice the skin too (apart of the lemon and orange because it's too bitter). If you don't buy organic please peel apple, radish...
  2. I use a juicer and I pass the veggies three times, every time you can extract more.

Ingredients
  1. 1 Rande
  2. 4 Radieschen
  3. 1 dunkelroter Apfel
  4. 2cm Stück Ingwer
  5. ½ Zitrone
  6. 1.5cm Stück Rotkohl
Instructions
  1. Arbeitsfläche reinigen und Zutaten bereit stellen.
  2. Gemüse waschen ( Radieschen mit einer Kartoffelbürste) und die Zitrone schälen.
  3. Falls Sie den Mixer verwenden, die Kerne des Apfels entfernen.
  4. Entweder entsaften (ohne Fruchtfleisch und einfacher zu verdauen) oder mit etwas Wasser in einem starken Mixer pürieren (mit Fruchtfleisch und Nahrungsfasern).
  5. Mit Salz und/oder Agavensirup abschmecken.
Notes
  1. Biologisches Gemüse ist besser, da Sie die Schalen mitverwenden können ( ausser Zitrusfrüchte, da die Schale bitter ist), sonst würde ich sie schälen. Ich brauche gerne den Entsafter und lasse alles drei mal durchlaufen, um alle Nährstoffe auszupressen.
