How could this blog possibly be an Italian food blog without tiramisù? 

When I speak about tiramisù with non Italian people I always feel that abroad there is this idea that we eat as much tiramisù as pasta, every day, several times a day… Well not exactly… it is good, don’t get me wrong… but once in awhile is enough as it is a very energetic dessert (Tiramisù litterally means ‘lift me up’..). Anyway… when on Saturday my English friend Linda was coming for dinner with her husband Sigi I knew they would have liked it, so here it is… for everybody…

I used my aunt Pina’s sponge cake for this recipe (you can find it here). If you don’t already have it in the freezer or you don’t have time to make it then you can always replace it with savoiardi!

As you will see in the recipe card below, I pasteurize the egg yolks before adding the mascarpone, I just feel safer, especially if I have guests.
I like very much serving my tiramisù in single portions: in nice glass dessert bowls for a dinner or, if it’s for a Sunday lunch or brunch, I enjoy using marmalade jars (like Quattro Stagioni, Weck or any other…).

You can decorate the top using a pastry bag for the last layer of cream (you can buy disposable bags at the supermarket…) and don’t forget the cocoa powder or some chocolate flakes…!

Ingredients
  1. 90g Egg Yolks
  2. 170g Caster Sugar
  3. 50g Water
  4. Vanilla
  5. 250g Whipped Cream
  6. 250g Mascarpone
  7. 300ml Coffee
  8. 10g Cocoa Powder
  9. 250g Sponge Cake (see recipe on the blog) cut in slices 2cm thick or Savoiardi (300g)
Optional
  1. Add to the coffee 2 spoons of Sugar and a bit of Rum
Instructions
  1. Clean surface areas and get your ingredients nice and ready.
  2. Make the coffee and let it cool down in a bowl.
  3. In a mixer start beaten the egg yolks with the vanilla.
  4. In a small pot warm water with sugar to 121°C (use thermometer).
  5. Pour melted sugar in the egg yolks and keep beating until room temperature.
  6. Add mascarpone and then the whipped cream (use a spatula and move it gently from down up).
  7. Assemble your tiramisù: a bottom layer of sponge cake (cut it according to the size of your bowls) soaked (not too much!) in coffee, a layer of cream and then repeat once or twice, with the top layer being cream.
  8. Sprinkle cocoa powder and some chocolate flakes.
Notes
  1. Take water with sugar off of the heat just before 121°C as the temperature rises fast and by the time you are pouring it will be 121.
  2. Soak the sponge cake slices halfway through the coffee then turn them upside down and lay them down on the lip of the plate (see photo).
  3. When laying the sponge slices (or savoiardi) over the cream start from the perimeter and press a bit, if you start from the centre the cream will cover them from the sides. You can use more sponge pieces on the perimeter to create a more visible layer.

Ingredients
  1. 90gr Eigelb
  2. 170gr weisser Zucker
  3. 50gr Wasser
  4. Vanille
  5. 250gr Schlagsahne
  6. 250gr Mascarpone
  7. 300ml Espresso oder Kaffee
  8. 10gr Kakaopulver
  9. 300g Biscuit (siehe Rezept im Blog) in 2cm dicke Scheiben schneiden oder Löffelbiscuits
Variante
  1. 2 Löffel Zucker und etwas Rum zum Kaffee geben.
Instructions
  1. Arbeitsfläche reinigen und Zutaten bereit stellen.
  2. Den Espresso zubereiten und abkühlen lassen.
  3. Die Eigelbe mit der Vanille in die Küchenmaschine geben und einschalten.
  4. In einer kleinen Pfanne Wasser mit dem Zucker auf 121°C erhitzten (brauchen Sie einen Thermometer).
  5. Den Zuckersirup zum Eigelb geben und weiter schlagen, bis die Masse auf Raumtemperatur abgekühlt und schaumig ist.
  6. Mascarpone dazugeben und dann den geschlagenen Rahm vorsichtig mit einem Spatel unterheben.
  7. Biscuit in eine Form legen, mit dem Espresso tränken und eine Schicht Mascarpone darauf verteilen. Ein bis zweimal wiederholen und mit einer Schicht Mascarpone beenden.
  8. Mit Kakaopulver und Schokoflocken garnieren.
Notes
  1. Das Wasser mit dem Zucker kurz bevor es 121°C erreicht hat vom Herd nehmen, da es sehr schnell heisser wird.
  2. Das Biscuit zur Hälfte tränken und dann umgekehrt in die Form legen (siehe Foto).
  3. Wenn Sie das Biscuit (oder die Löffelbiscuits) auf die Mascarponecreme legen, beginnen Sie am Rand und drücken Sie sie etwas an. Wenn Sie in der Mitte beginnen, wird die Creme sie von den Seiten bedecken.
  4. Sie können am Rand etwas mehr Biscuits legen, um die Schichten besser zu sehen.
