MARTINA & RIC DUMPLINGS
My friends Martina and Ric live in Zurich. She is a swiss miniature embroidery creative, he is a half computer geek, half hipster english man.
They just moved to their new house and they kindly invited us over for a nice Sunday lunch, on the warmest November day Switzerland has ever seen.
They cooked for us gorgeous homemade dumplings accompanied by a great asian salad recipe.
Not only they cooked for us but I was delighted in following first Martina, that taught me how to put together a dumpling, and then Ric who taught me a real trick on how to give a nice crispy bottom to the dumplings by creating what he calls a “skirt”!
They have a great taste and their house has a very warm feeling. I love their danish shelf systems, their broki finds, their Berlin alcohol cabinet on wheels and their vintage Bang&Olufsen record player with amplifier.
I find Martina’s studies very inspiring. After taking a course in London she is now experimenting on two different patterns: one very evanescent, a pattern made of feathers look like embroidered organza; the other, almost an upholstery piece, is made of a thick cardinal colour velvet that forms an elaborate 3D pattern. Lunch was delicious and was followed by a relaxing “sofa plus vinyl’s music plus whiskey” Sunday evening.
Plus good friends, of course.
- 400-500 Minced pork
- 1 head Bok Choy or 1/2 big Chinakohl
- 2cm piece grated Ginger
- 3 Garlic cloves, mashed
- 1/2 teaspoon White Pepper
- 1 chopped Spring Onion (a bit of green too)
- 1/2 de-seeded fresh chili / 1 de-seeded birds-eye chili
- 1 teaspoon Sesame Oil
- 1 tablespoon Oyster sauce
- Handful of fresh Coriander
- Pinch of sugar
- 1 Egg
- 30-40 Dumpling skins (the Korean type ones work very well)
- 2 tablespoons Sesame Oil
- 1/2 Hot Water mixed with 1/2 Cornstarch (Maizena)
- 50% Rice Vinegar
- 50% Soy Sauce
- Sweet Chili Sauce
- Clean surface areas and get your ingredients nice and ready.
- Chop bok choy (or chinakohl), spring onion, fresh chili and fresh coriander. Grate ginger (it is a very good tip to keep it in the freezer as it is then much easier to grate). Mash garlic cloves.
- Mix all the ingredients for the filling in one bowl.
- Take one dumpling skin in one hand and, after dipping your finger in water, make the dumpling rim wet (this way it will stick together when you fold it).
- Put a couple of teaspoons of filling in the middle. Fold the skin in two and squeeze it in the top middle. Make two folds on each side (look at the video above).
- You should make about 30 dumplings if using 450g of pork.
- Mix in a cup half hot water with half corn starch using a whisk.
- Warm some sesame oil up in two pans and add the dumplings- heat 8/10. After 3 minutes add the water+cornstarch mix, cover with lid and leave them on 6/10 for 10 minutes. Checking every once in awhile that the liquid doesn't evaporate.
- Take the lid off and after 2 more minutes take the pans off of the heat.
- A nice crust will keep the bottoms of all the dumplings together. Put them in a serving dish and divide the dumplings with a fork or a knife.
- 400-500gr gehacktes Schweinefleisch
- 1 Kopf Pak Choi oder ½ grossen Chinakohl
- Ein 2cm Stück Ingwer
- 3 Knoblauchzehen
- ½ TL weissen Pfeffer
- 1 Frühlingszwiebel mit dem Grün
- ½ entkernte, frische Chili / 1 entkernte Thai Chili (scharf)
- 1TL Sesamöl
- 1EL Austernsauce
- 1 Handvoll frischen Koriander
- 1 Prise Zucker
- 1 Ei
- 30-40 Teigstücke für asiatische Teigtaschen (der koreanische eignet sich sehr gut).
- 2EL Sesamöl
- 60 ml Wasser - 160ml kochendes Wasser - 3EL Maizena
- 50% Reisessig
- 50% Sojasauce
- Süsse Chilisauce
- Arbeitsfläche reinigen und Zutaten bereitstellen.
- Pak Choi (oder Chinakohl), Frühlingszwiebel, Chilies und Koriander in feine Streifen schneiden. Ingwer reiben (wenn Sie den Ingwer tiefkühlen, lässt er sich besser besser reiben). Knoblauchzehen zerdrücken.
- Alle Zutaten für die Füllung in einer Schüssel vermischen.
- Nehmen Sie ein Stück Teig in die Hand und befeuchten Sie die Ränder mit etwas Wasser (so kleben sie zusammen, wenn sie gefaltet werden).
- Geben Sie ein paar Teelöffel Füllung in die Mitte. Falten Sie den Teig in der Hälfte und drücken Sie die Teigkanten in der oberen Mitte zusammen. Machen Sie in jeder Ecke eine Falte (siehe oben im video).
- Aus 450gr Fleisch sollten Sie ca.30 Teigtaschen erhalten.
- Mit einem Schneebesen das Wasser und das Maizena vermischen.
- In 2 Pfannen etwas Sesamöl erwärmen und die Teigtaschen dazu geben, auf der Stufe 8/10 anbraten lassen. Nach 3 Min. die Wasser-Stärke Mischung dazugeben, zudecken und auf der Stufe 6/10 für 10 Min. garen lassen. Hin und wieder überprüfen, ob genug Flüssigkeit vorhanden ist, ansonsten etwas heisses Wasser beifügen.
- Die Deckel entfernen, und nach weiteren 2 Min. die Pfannen vom Herd nehmen.
- Eine schöne Kruste hält nun die Böden der Teigtaschen zusammen. Legen Sie die Teigtaschen auf einen Teller und trennen Sie sie mit einer Gabel oder einem Messer.
